Easy green lentil salad

This salad is so easy and quick to make you will want to make it for your lunch at work every week, like I do. I use Sainsbury’s organic green lentils which are already cooked to save myself some time.

  1. a carton of organic cooked green lentils (Sainsbury's)
  2. a handful of plum tomatoes, chopped
  3. 2 spring onions, chopped
  4. 1/4 cucumber
  5. 2 baby courgettes (or 1/2 of a smaller courgette), chopped
  6. feta cheese
  7. extra virgin olive oil
  8. 2 tbsp lemon juice
  9. salt as required
  1. Drain and rinse the lentils and add them to you work lunch container.
  2. Chop all the vegetables and add them to the lentils.
  3. Add a dash of extra virgin olive oil and lemon juice, mixing everything together.
  4. Add crumbled feta cheese on top.
  5. Add salt if required just when you are about to eat the salad.

  1. A great idea to use lentils as the main base of a salad. For some reason I tend to use mine as part of a dish, but they’re so filling and satisfying I can see this would totally work. Inspired to get playing, thank you! x
