High fibre green smoothie bowl with pomegranate seeds

Nutritious green smoothie bowl, perfect for quick lunch or dinner

Ingredients

  • 200 ml or more of coconut milk (or other cow's milk alternative)
  • 1 tbsp flaxseeds
  • 1 tbsp psyllium husk
  • 1 medium size ripe banana
  • 1/3 cucumber
  • a handful of spinach
  • 1 tbsp peanut or almond butter
  • a handful pomegranate seeds
  • 2 tbsp hulled hempseeds
  • 1 tsp organic coconut oil
  • pomegranate seeds for topping

Instructions

  • Wash the spinach and cucumber and add them to the blender.
  • Add the rest of the ingredients and blend on high speed until smooth.
  • Serve with pomegranate seeds sprinkled on top.

Notes

Having pomegranate seeds as an ingredient is not essential and you could easily skip them.
You can make the smoothie less thick by adding more liquid.
