Wholewheat pasta with tuna and peppers

Ingredients
1
small red onion
wholewheat spaghetti or other type of pasta
(1 person portion)
a can of tuna in brine
1
green pepper
a handful of sweet plum tomatoes
(halved)
1
tbsp
tomato purée
1
tbsp
extra virgin olive oil
1
tbsp
extra virgin rapeseed oil
1
garlic clove
(chopped)
parsley
Instructions
Slice onion and pepper quite thinly to facilitate fast cooking.
Chop the garlic and tomatoes.
Boil the water and cook pasta for 10 minutes while you are preparing the tuna sauce.
Heat up a spoon of rapeseed oil and sautee onions for a few minutes.
Add sliced pepper and garlic and continue cooking on medium heat for a few more minutes.
Add some water to prevent it from burning and cook for few more minutes (if necessary) until green peppers are tender enough.
Add drained tuna, tomatoes and tomato puree and cook for 2-3 minutes, adding little water if necessary. Remove from the heat.
When pasta is cooked, add a splash of olive oil to it, mix well together and put on a plate.
Add tuna with peppers on top and decorate with parsley.
Notes
You could experiment by using other types of fish and other vegetables if you like.
