Wholewheat pasta with tuna and peppers

Ingredients

  • 1 small red onion
  • wholewheat spaghetti or other type of pasta (1 person portion)
  • a can of tuna in brine
  • 1 green pepper
  • a handful of sweet plum tomatoes (halved)
  • 1 tbsp tomato purée
  • 1 tbsp extra virgin olive oil
  • 1 tbsp extra virgin rapeseed oil
  • 1 garlic clove (chopped)
  • parsley

Instructions

  • Slice onion and pepper quite thinly to facilitate fast cooking.
  • Chop the garlic and tomatoes.
  • Boil the water and cook pasta for 10 minutes while you are preparing the tuna sauce.
  • Heat up a spoon of rapeseed oil and sautee onions for a few minutes.
  • Add sliced pepper and garlic and continue cooking on medium heat for a few more minutes.
  • Add some water to prevent it from burning and cook for few more minutes (if necessary) until green peppers are tender enough.
  • Add drained tuna, tomatoes and tomato puree and cook for 2-3 minutes, adding little water if necessary. Remove from the heat.
  • When pasta is cooked, add a splash of olive oil to it, mix well together and put on a plate.
  • Add tuna with peppers on top and decorate with parsley.

Notes

You could experiment by using other types of fish and other vegetables if you like.
