Salted Cacao and Nut Butter Bites

Author: Carly Trigg

  • 50 g pitted dates (chopped)
  • 2 tbsp sliced almonds
  • 4 tbsp almond butter (room temperature)
  • 1 tbsp pure maple syrup
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp ground cinnamon
  • pinch of sea salt
  • 80 g quality chopped dark chocolate (melted)
  • 1 tbsp cacao nibs

  • Line a baking sheet with parchment paper to prep your mixture.
  • In a mixing bowl, combine the chopped dates, almonds, nut butter, syrup, vanilla, cinnamon and salt. Don’t stop mixing until the batter comes completely together and can be easily made into balls.
  • Roll the mixture into small tablespoon-sized balls and dot onto the baking sheet.
  • Drizzle each ball with the melted chocolate and sprinkle with the cacao nibs.
  • Place the baking sheet into the refrigerator for half an hour or until the ball and the chocolate on top has set.
  • Now they’re ready to eat. Take one (or five) and pass them around!
