Mediterranean prawn salad

Healthy low-carb lunch, great for work

  • 200 g prawns
  • 100 g mixed salad leaves 3 good handfuls or less if you prefer. I like salads with loads of greens
  • 6 olives
  • 5 plum/cherry tomatoes chopped
  • 1/4 cucumber sliced or chopped
  • 2 spring onions chopped
  • 1/2 avocado cut in chunks
  • freshly squeezed lemon juice from 1/2 lemon
  • 1 tbsp extra virgin olive oil
  • salt if needed praws and olives are already quite salty


  • Prepare all the vegetables and put them into a medium size bowl.
  • Add olive oil and lemon juice and mix everything together.
  • Put the salad onto a deep plate and add prawns on top.
  • Add salt if needed.
